IMMUNE-BOOST SMOOTHIE RECIPE

Serves 2

From Run Fast. Cook Fast. Eat Slow.

  • 1 apple, quartered, core removed
  • 1⁄2 frozen banana
  • 2 kale leaves, stems removed
  • 1 celery stick, quartered
  • 1⁄2 lemon, seeds removed, peeled
  • 1⁄4 cup parsley leaves
  • 1-inch knob fresh ginger, peeled, optional
  • 2 cups coconut water
  • 1 cup ice

 

In a blender, combine the apple, banana, kale, celery, lemon, parsley, ginger (if using), coconut water, and ice. Blend on high speed for several minutes until smooth.

Pro Tip: Add a spoonful of virgin coconut oil
to the above to help your body absorb the fat- soluble vitamins. Coconut oil is an energizing fat with natural antimicrobial properties making it good for your immune system.
